Caffeinated Coffee Cake

Cold Brew Coffee Extract - 1 lb ground medium roast coffee - 9 cups cooled water Crumble - 1/3 cup suger - 1/3 cup brown sugar - 1 tsp cinnamon - 1 1/2 cup pecan ( chopped) - 4 tsp butter (melted) - pinch salt Cake - 2 cups sugar - 3 egg - 1 Tbsp Vanilla extract - 1/2 tsp baking powder - 1/2 tsp baking soda - 2 cups AP flour - 1 1/4 cup oil (Unflavored) - 1 3/4 cup Cold Brew extract
Cold Brew Coffee Extract 1. In a bowl add the coffee and water. Cover and place in fridge over night. 2. Strain coffee from grounds, discard grounds and hold for recipe. - Note: If you want to make cold brew coffee dilute the extract with equal parts water. Crumble 1. Combine all ingredients in a bowl, mix them together and then put them to the side. Cake 1. Combine eggs and sugar in a mixer. Slowly pour in the oil while the mixer is on medium speed. 2. In a second bowl sift together flour, baking powder, and baking soda. 3. Add half the flour mixture to the mixer, while on medium speed. Alternate this with the cold brew extract. 4. Add the batter to a small baking dish, lined with parchment paper. 5. Add 1/4 of the crumble to the surface of the batter. 6. Place in a 325˚F oven for 40-50 minutes. 7. At the 30 minute mark, add the remainder of the crumble to the top of the cake. 8. Let the cake cool completely before eating.
